  1. Soak the skewers in water for about 30 minutes prior to cooking.
  2. Whisk together prepared veggies, spices, and lemon juice in the mixing bowl to create a lemon marinade. Coat chicken with marinade and allow to marinate for at least an hour prior to cooking.
  3. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper. Thread the skewers, alternating between chicken and vegetables.
  4. Bake chicken skewers in the oven for 10 minutes. Remove from oven, rotate the skewers, and cook for an additional 5-10 minutes or until chicken is cooked.
