INGREDIENTS
- 1 lb Chicken Breast, Cubed
- 2 Bell Peppers, Cubed
- 1 Red Onion, Sliced into chunks or rounds
- 1 Zucchini, Sliced Into Rounds
- 2 Tsp. Sea Salt
- 2 Tsp. Black Pepper
- 1 Tbsp. ground Turmeric
- 1 Pinch Cayenne
- 2 Tsp. Garlic Powder
- Juice From 2 Lemons
- Wooden Skewers
DIRECTIONS
- Soak the skewers in water for about 30 minutes prior to cooking.
- Whisk together prepared veggies, spices, and lemon juice in the mixing bowl to create a lemon marinade. Coat chicken with marinade and allow to marinate for at least an hour prior to cooking.
- Preheat oven to 450 degrees F. Line a baking sheet with parchment paper. Thread the skewers, alternating between chicken and vegetables.
- Bake chicken skewers in the oven for 10 minutes. Remove from oven, rotate the skewers, and cook for an additional 5-10 minutes or until chicken is cooked.
